America Eats Tavern (405 8th Street), the unique, pop-up restaurant that replaced Café Atlantico on Independence Day, will extend its run through July 4, 2012. The six-month “benefit” destination, created by chef Jose Andres and ThinkFoodGroup, was originally scheduled to close next month, when the National Archives(700 Pennsylvania Avenue) What’s Cooking, Uncle Sam? The Government’s Effect on the American Diet exhibit ends.  But now, the historical dining experience, which serves as an extension of the nearby exhibit and celebrates America’s cooking history with a menu filled with the stories and characters of the nation’s culinary past, will proceed. Our only conclusion: the transition from café to tavern was successful—boding well for the National Archives. A partnership between Andrés and the Foundation for the National Archives spurred the new concept, the proceeds of which will help fund the Archives’ educational efforts.
